Affinage
Affinage, or the aging of cheese, is what brings it to optimal maturation, allowing it to release its full flavor. Of course, the degree to which a cheese is aged is also a matter of taste. You might prefer a cheese well-aged, or slightly aged, but for JEAN D’ALOS, there’s that moment when the cheese is perfectly aged.
